Chef Nikki Olst, Union Station

Executive Chef Nikki Olst has been active in the Denver culinary community for seven years.  She assists the “We Don’t Waste” nonprofit organization every chance possible. Hospitality, service, and community are strong drivers for Chef Olst’s passion in the culinary world.  Some career highlights to note include being executive chef with Denver Union Station and with Epicurean Catering at Sports Authority Field. In addition, she’s the co-host for Modern Eater Radio and an instructor at the International School of Culinary Arts at the Art Institute of Colorado. Chef Olst believes that the food we eat should be raised, harvested, and sourced with sustainability and thoughtfulness in mind.
